    It's a funny old world, things go in and out of fashion and it's said to be the doom of man that he forgets (I like that one!). One thing that fits into this pattern is the consumption of raw foodstuffs, back in the day it was ALL we could do!! Yet now it's seems to be viewed as a new and healthy trend. Chew on that for a while, there is really very little out there in the dietary world that we have not already done, got bored of, forgotten about then had come back as the latest trendy thing to do.

    Natural health is timeless. It will never date. It will always be relevant, despite what the media tells you about 'new', 'improved', 'scientific' and all the other gimmicky words that are only employed to impress you enough to buy something.

    And, happily, natural health is currently enjoying the comeback it deserves. To enjoy it, there are at least three really important aspects to address.

    The first is your diet. There's a saying that a quarter of what you eat keeps you alive. Three quarters of what you eat keeps your doctor alive. So if you eat a typical western diet of fast foods, canned drinks and sweets or chocolate, you know you're heading for disaster.

    A natural diet consists of lots of fresh fruit and vegetables, preferably raw. Raw isn't essential, but will take you that extra mile. As long as at least 30% is raw, you'll do all right. By raw I mean unpasteurised, unheated in any way, un-radiated, unadulterated. Just fresh produce recently harvested.

    So fresh produce should be the bulk of your diet. If you can't see yourself eating a lot of fresh produce, then I suggest you invest in a food dehydrator. That dries fresh food without losing the nutrients in them. Have you ever tried dried strawberries? They are absolutely delicious.

    I'm sure you'll enjoy making your own unsundried tomatoes, too. And try foods you haven't tried before. My neighbour has never tried avocado and yet they could grow in her back yard. Be adventurous!

    The next biggest food group is the nuts, seeds, rice, oats and yogurt. Then come eggs, bread, wheat, cereal, fish, chicken, chocolate. Then comes the red meat. Lastly comes artificial sweeteners. My suggestion is to avoid these altogether.

    This diet follows the 80/20 principle. Eat 80% alkalising foods (fruit, veggies, whole foods) and only 20% acid food (meat, sugar, processed foods such as white bread, white pasta, white rice, sweets).

    If you maintain this diet, it's amazing what ailments won't affect you. Make sure 100% of what you eat goes into keeping you healthy, not just alive. And let the doctors starve!

    Another really important aspect of natural health is your health care modality. Obviously that's going to be a natural one. Which you choose is a very personal matter. But I suggest you remain open and honour your feelings. Your feelings will always take you in the right direction. I have long since learnt the folly of following my head over my feelings. It never works!

    With evidence now suggesting a link between taking antibiotics and cancer, your choice of a natural health care system will ensure as healthy a body as you can get. All drugs and medication have a knock-on effect with your health. That's why it becomes a slippery slope - you suddenly find you're on a myriad of drugs, with one countering another's side effects.

    The last important point of natural health, is keeping your environment healthy. This will almost guarantee you a healthy body. This means your home really is your castle, your sanctuary. Make sure you create a peaceful and happy home. Work on areas that aren't. Don't put up with them. It may be your upbringing that makes you a negative person. It may be you are living with people who don't support you. List those things that aren't nurturing you and decide what to do about them.

    Time spent with animals is invariably calming, as is time spent in nature. Visit the park regularly. Walk on the beach. Watch a thunderstorm. Make sure you have, even if short, time for yourself every day. And use it to recharge your batteries - whether it's gardening, sun-bathing or walking your dog. Just make sure it benefits you. That without it, you're more volatile, have less energy or just don't cope as well.

    Many people think they can't have time out for themselves as they have too much to do. This is not how it works. The more you stress, the less you accomplish. The less you stress, the more you accomplish and in less time.

    Natural health is really all about you being in control of you. You create your life. So why not make it as fun, as joyful as possible? You are important. If you're joyful, it will rub off on others. Maybe subscribe to a natural health magazine as that will not only help keep you on track, but will also provide you with useful hints and tips.

    After youve picked a fair amount, wash to get rid of any loose dirt. Shake off the excess water. You can air dry the flowers by putting them in a dry place in the house for several days. Covering lightly with cheesecloth can help keep dust off while they dry. If youd like the process to go faster, you can put them in the oven for several hours on a low heat. You dont want to bake them, just make the drying go faster. A food dehydrator is another way to speed up the drying process.

    Mary Bell's Complete Dehydrator Cookbook

    French chefs plunge them into boiling water; English ones, in an attempt to appear more humane, drive kitchen knives through their skulls before doing the same thing.

    No wonder the miserable creatures go red. Theyre mad as hell. What a way to treat the king of crustaceans.

    Lets make a pact. From now on lets treat the lobster with the respect (and humanity) it deserves. Heres how:

    Use a pan deep enough to hold 6 liters of salted water to which you have added some shredded onion, a garlic clove or two and a bay leaf. Purists who live by the sea also like to add a pint of seawater. People like me, whove seen what gets washed up as a result of coastal run-off, dont.

    Put a trivet or round roasting rack in the bottom of the pan, on which you will place the lobster. You do this so that it is not touching the bottom of the pan and will not be burnt as the metal heats up.

    Does this improve the flavor? No, its purely for the comfort of the lobster.

    So, this is what you have a pan of cold brine, seasoned, in which a lobster sits on a trivet as happy as a sand boy. How do I know this? Because lobsters have two states of being theyre either happy or theyre dead.

    Now, using a gentle heat, gradually raise the temperature of the water to around 90F, at which point the lobster will be fast asleep and sweetly dreaming. It will never wake up.

    You can now turn up the heat until the water reaches a gentle simmer and cook the lobster for around 8 minutes a pound.

    Drain and plunge into iced water. Let it cool in there before draining again and transferring to the fridge until needed.

    The lobster will reward you for this kindness by being succulent and tender. It wont be stuffed with adrenalin and its meaty fibers will not have contracted into something resembling India rubber.
    The next step is to cut the lobster in half and to clean it.

    Lay it on its back and use a strong, very sharp, knife to cut it in half from tail to head. You will easily see the stomach bag at the back of the head and the blackish gut running the length of the body. Remove these and discard.

    You may also, if you wish, discard the greenish liver, although aficionados hold this to be a delicacy. Its certainly edible, but personally I chuck it because I dont like the color.

    And thats it. You can now serve your lobster cold with some freshly made mayonnaise, or indulge in one of the more fanciful hot dishes for which some restaurants have become famous.

    Prohibition marked a unique period in American history. Between 1920 to 1933, the sale, manufacture, and transportation of alcohol for consumption were banned nationally as mandated by the 18th Amendment to the United States Constitution. Temperance movements throughout the U.S. during the 19th century brought about significant pressure on lawmakers and some states had already enacted statewide prohibition prior to the ratification of the 18th Amendment.

    However, as the Great Depression wore on, Prohibition became increasingly unpopular, especially in the large cities. When repeal was finally enacted in 1933, Prohibition had brought about several notable effects: The first was the significantly lower number of breweries that re-opened - only half - than had existed prior to Prohibition. Wine historians point out that the Prohibition affected the fledgling U.S. wine industry as thicker-skinned grapes that could be easily transported replaced wine-quality grape vines. Lost too was the collective knowledge of wine makers who either emigrated to other wine-producing countries, or left the wine making business altogether. The post-Prohibition period, however, saw the introduction of the American lager style of beer, which dominates today. Most interestingly is the belief by some historians that the alcohol industry accepted stronger regulation of alcohol in the decades after the repeal, to reduce the return of Prohibition.

    Following the repeal of Prohibition, a three-tier system of alcohol distribution was set up in the United States. The three tiers are producers, distributors, and retailers. A producer sells to a distributor who must sell only to a retailer. According to the Beer Institute, each state has created a three-tier system of beer distribution. Producers can include brewers, wine makers, distillers, and importers. The distributor tier is made up of more than 2,500 licensed businesses that store and deliver beer at the local level. The retail level represents hundreds of thousands of outlets that sell beer to the public.

    The three-tier system enables states to track the actual movement of beer from the producers and importers to consumers through licensing requirements and legal obligations on companies who transport, deliver and sell beer. This system of checks and balances eliminates the economic incentive for illegal manufacturing, diversion and distribution of beer. Finally, consumers benefit from the healthy competition and facilitation of a wide selection of brands in the marketplace - from big-name breweries to specialized, small-batch operations.

    Central to the system are America's beer distributors. Typically, producers give distributors exclusive rights to market their product within a geographical region to restrict two distributors of the same product from competing against one another. An important link to sustaining America's beverage licensees in every state, distributors add value to every product handle. For instance, every $1 spent on beer distribution generates .25 cents in federal tax revenue and nearly .14 cents in state and local taxes. Distributors help raise more than $5.2 billion in federal state excise taxes on the product itself.

    Beer distributors also help businesses grow by reducing expenses and expanding profitability. In total, distributors reduce retailer operating costs by nearly $50 for every $1,000 spent on beer by consumers. For example, a store chain comprised of 1,000 stores can realize a saving of $17,318,007 in retailer costs. Those savings can be reinvested by retailers into job creation, business expansion, and customer savings. In addition to benefiting retailers, the economic contributions of distributors also reaches packaging manufacturers, shipping companies, and the agricultural sector.

    This system of checks and balances also extends to the community.     Raw foodism (also called rawism) is based on eating un-cooked, un-processed, and often organic food. Believers feel the higher the percentage of raw food in the diet, the greater the health benefits. Sproutarians eat primarily or exclusively sprouted food, such as bean sprouts. Alleged benefits of a raw vegan diet include weight loss, increased energy, clear skin, and general health improvement.

    Raw animal food includes meat, cheese, and fish. Raw meat eaters should seek out grass-fed animals which according to many studies have a greatly reduced risk of bacteria than do grain-fed animals. Furthermore grass-fed meat contains more nutrients including vitamins, minerals, and Omega-3 fatty acids than does grain-fed meat.

    If you are going to get involved in raw food you may want to invest in the following equipment: blender, food processor, juicer, and dehydrator. Some people will eat frozen food, others will not. Some of them will eat smoked food, others will not. And some distinguish between cold-smoked and hot-smoked food. Be careful, there are clear dangers in eating some raw foods such as kidney beans and unpeeled potatoes.

    Here are some of the alleged benefits of raw foods. Raw foods contain digestive enzymes that are destroyed when food is heated beyond the temperature range listed above. Destroying these enzymes is said to be a cause of obesity. Raw foods contain useful bacteria and other microorganisms that aid the immune system and digestion. Raw foods have higher nutrient values than cooked food. Processed food contains all kinds of chemicals that are bad for us. (I certainly agree with that.) Cooked foods may contain toxins and can lead to acidosis. On the other hand, food poisoning from eating raw or undercooked food is a definite possibility. Believe it or not, even jalapeno peppers can host dangerous microorganisms. Many raw food eaters are underweight, while this may sound tempting to those who are trying to lose weight but being underweight can be a health problem.

    Just Jerky : The Complete Guide to Making It

    Here's the do-it-yourself guide to making your own jerky in an oven, smoker, or food dehydrator with strips or ground beef, venison, poultry, fish and even soy protein.


    To begin your search for Christmas decorations just head outside. Take a trip with the family to the mountains, lake, park, river, or your own property, to search the ground for fallen branches and twigs. Pick up pinecones, acorns, seedpods, late blooming wildflowers, and fallen leaves. Sprigs of cedar, pine tree, and douglas fir are choices as well. The best thing about these green decorations is that they leave the green in your wallet.

    Once you get your findings home, begin the decorating. Fill bowls, boots, baskets, stockings, buckets, wine glasses, or anything else you can think of, with your findings. Hang stockings from the mantel and fill them with greens and pinecones so they stick out the top and spill over. Fill wine glasses with tiny pinecones, greens, and cranberries, and place them on the table or mantle. Make wreaths and boughs with your greens and embellish with bows and large pinecones. Hang wreaths on the front door and windows while placing boughs on the mantel or above doorways.

    If you own a dehydrator, this can come in handy to make dried fruit to use in your decorations. Slice apples and oranges and place them in the dehydrator. Slice them about 1/3 inch thick and make sure to leave the peel in tact. Slice them in half and continue slicing in the same fashion. These fruit slices can be used in potpourri, garlands, to decorate wreaths, to place in bowls, tie to Christmas gifts, the ideas are endless.

    Fill a wooden bowl or antique wooden trough with nuts in their shells. Use hazel nuts, brazil nuts, almonds, and so on. Place the bowl on the coffee table and surround the bowl with your greens and pinecones. Place a couple of candles with candlesticks on either end of the bowl and light the candles when guests arrive.

    Make gingerbread and sugar cookies cut out in Christmas shapes and decorate them with frosting and embellishments like gumdrops, raisins, m & ms, and jelly beans. Place your homemade cookies in bowls around the house to welcome guests. Send your guests home with little goodie bags filled with cookies and nuts. Tie the bags with ribbons and attach your dried fruit to the ribbons.

    In Pursuit of the Perfect Omelet

    I don't know about you, but I just love omelets. Whether at home or in a restaurant, an omelet is my favorite meal.

    There are some things that bug me when I cook my own omelets, however:

    (1) My favorite frying pan has a 10 inch diameter bottom, and cooking an omelet in this large pan requires three or four eggs and a lot of filling--more than I want for one meal.

    (2) When you fold over two sides of a round omelet base, the filling is exposed at both ends.

    (3) If you are not very careful with cooking time, the omelet base becomes leathery.

    (4) When you fold up the sides of a large omelet, they tend to spring open again--very frustrating.

    I think I have finally solved these problems. If you would like to copy, here is what I did:

    First, I partitioned my big frying pan to reduce the bottom area.

    Silicone rubber worked well for this. It is flexible, non-stick, resists high temperature and is quite inert, so it won't contaminate your food.

    Silicone rubber is available in tubes at your auto parts store. Be sure to select the red color. This is the high temp variety. My tube says it is good up to 650 F.

    To cast the silicone rubber into the shape I wanted, I made a simple paper mold. A piece of typing paper was taped to a flat board and a 6 x 9 inch rectangle was drawn on the paper. Diagonal lines connecting the corners gave the center of the rectangle where the lines crossed.

    From the center, circular arks were drawn at both ends of the 9 inch dimension to accommodate the curvature of the pan. This defines the inside dimensions of the partition. If you have a rectangular griddle, forget the arks and leave the ends square.

    Finally, lines 3/8 inches out were drawn all around.

    Strips of paper 1/4 inch wide were cut with a paper cutter and fastened vertically with hot melt all around the inside and outside of the drawing. First tack the strips every inch or so, then fill in after these tacks have set.

    Now you have a 3/8 inch wide channel by 1/4 inch high. Fill this with the rubber and let it cure for 24 hours.

    When it cures, most of the paper mold will just strip off. Any paper that won't come off can be removed by soaking the rubber part in water for a few hours until the paper disintegrates.

    Make sure the rubber picks up the flat bottom surface of the paper mold by using a 3/8 wide tool to force the rubber downward into the mold as you squeeze it out of the tube. Otherwise, it may cure with air pockets where you want the rubber to fit flat to the frying pan bottom. A screw driver works well for this. Never mind that the top surface of the rubber will be rough and uneven.

    To use your finished rubber partition, pre-heat the pan first, then position the partition in the pan and fill it with the egg mixture. When the egg mixture has set, the rubber will easily pull away from the sides of the omelet base.

    Two eggs and two tablespoons of water, well beaten, fill my rubber partition just about right. This solves the first problem I listed above.

    It also solves the second problem, because the straight sides of the omelet fold up to cover the filling completely.

    The third problem is solved by adding a teaspoon of baking powder to the egg mixture. This makes the egg base light and fluffy and puffs it up to 1/4 inch thick or more. This also works great for scrambled eggs. Every good cook may already know this, or it may have been a flash of genius on my part. In any case, it really works. Try it. You'll like it!

    One problem, though: The added thickness makes it difficult to cook the egg all the way through. You can solve this by making a large turn-over tool and cooking the omelet base from both sides.

    A cookie sheet from the dollar store provides a good source of sheet metal for this. Cut a 9 x 6 3/4 inch rectangle from the bottom and bend up 1/4 inch sides along the 9 inch dimension. These sides prevent the omelet base from slipping off while turning it.

    A pair of vice pliers work well as a handle, but you can probably find another tool at the dollar store with a handle that can be removed from the tool and attached to the turner with pop rivets, bolts or picture wire.

    You will need a standard pancake turner to lift the omelet base slightly in order to get the large turner under it.

    The fourth problem above is easily solved with cheese. Instead of mixing cheese with the other ingredients you use as a filling for the omelet, sprinkle grated cheese over the flaps you are going to turn up. When it melts, it works as a glue to hold the flaps in place.
